Ingredients
1 cup pecans
1 cup rolled oats
1/2 cup medjool dates (about 8)
pinch of sea salt
vanilla bean yogurt
Sliced bananas, toasted coconut, and cacao nibs for garnish
Instructions
In the bowl of a food processor, pulse the pecans and oats into a coarse meal.
With the food processor running, at the dates one at a time through the feed tube. Process until mixture resembles cake crumbs and sticks together when pressed.
Divide mixture into 8 lightly oiled muffin cups. Press the mixture firmly into the bottom and sides.
Chill in the freezer for about 15 minutes. Use a knife to gently remove granola cups from the muffin tin. To serve, fill each with vanilla yogurt and garnish with sliced bananas, toasted coconut, and cacao nibs.
